Over two weeks from late October to early November, the region’s top chefs and restaurants cook up exclusive menus and unique dishes in honour of the Taste for Adventure celebration.
Pair your dining experience with a stay at the Juniper Hotel and enjoy one of Banff’s most anticipated culinary events against a backdrop of panoramic Rocky Mountain views.
Settle in above the valley for three courses inspired by the season. Begin with a grilled mushroom skewer glazed in birch teriyaki, served with cremini mushroom mousse. For your main, choose roasted butternut squash steak with toasted pistachios and tahini, or 48-hour braised bison with pomme purée, haskap jus and roasted parsnips. Finish with triple chocolate ice cream, crispy chocolate quinoa, carrot sponge and purple carrot gel. Enjoy each course with an optional pairing of Canadian wines, selected to complement the flavours on your plate.
