Easter at The Juniper

Spring has well and truly arrived in the Canadian Rockies, and Easter weekend is right around the corner.  Traditionally, Easter was a time to feast after 40 days of fasting for Lent, and good food is still an essential part of the celebrations. Longer spring days mean you can enjoy the Juniper Bistro’s panoramic mountain views from 7AM well into the evening, making this a perfect time to gather your loved ones and treat them to a unique dining experience, surrounded by the majesty of Banff National Park.

The Bistro is famous for our brunch, and we couldn’t resist giving it a special twist for Easter Sunday! Start the day on a sweet note with French toast made with a fresh Hot Cross Bun from the Wild Flour Bakery, topped with vanilla gelato and drunken berries. In a more savoury direction, and back by popular demand, our Valbella Smoked Ham Benny comes atop a flaky croissant, topped with Dijon, crispy garlic and a decadent black garlic hollandaise. Pair your selection with fresh-squeezed juice, quality coffee, or one of our delicious brunch cocktails.

For dinner, our $49++ Easter menu includes three courses with both innovative and traditional options. Earth Day falls on the Easter weekend this year, and we’re showcasing ethically sourced ingredients in dishes like the Sunchoke Salad starter, with chemical-free, hand-picked microgreens from Biotanic Farms. For the main course, try our vegan Cauliflower Rice Bowl, which enhances the flavour of roasted root veggies and pears with a silky cashew cream. The menu also includes a hearty Duck Fat Confit Turkey Leg, paired with roasted new potatoes, crispy brussels sprouts and a tangy cranberry chutney. At dessert time, there’s another chance to try a handmade Hot Cross Bun, or choose from our selection of gourmet sorbettos.
